When I was 11, my father taught me to hunt. My first game bird was a wild dove, which my father showed me how to clean and cook. This experience empowered me with feelings of self-sufficiency and an ability to put food on the table.

In 2007, I harvested my first elk in the mountains of Wyoming. I had heard stories from other hunters about issues in butcher shops and processors with not getting your own meat back, not cut according to order, unsafe processes and over-pricing. With a lot of trial and error, help from books and talking with other hunters, I started cutting my own wild game. Over the next 9 years, I kept processing my own harvests and started helping friends and family members process their wild game with high standards and ethics for every animal. In 2016, I opened up a small shop in my kitchen and processed over 60 animals in a three month hunting window.

While working with Hog Island Meats in 2017, in the back of my mind, I started laying the foundations for an ideal butcher shop with the goal of easing the tension between hunter and processor, one in which the customer would have 100% confidence in receiving the animal back that they brought in with the harvest processed correctly. In November 2017, I took over the mobile processing units in Sublette County with one employee and Scott’s Meats was born. Durimg the 2020 season, we processed a total of 478 animals with 4 butchers.

Plans are underway to get a domestic animal processing facility, which is slated for early 2022. This will provide a mobile butcher service, traveling to domestic animals, to ease the travel jitters that affect living animals.

As one of the last steps between the field and the plate, it’s important to me that animals are treated with respect and that meat has the proper care and aging, to bring out the best flavor and taste to the table.

It is my pleasure to share my knowledge with customers and help them have beautiful proteins for their meals. The highlight of my job is when a customer returns satisfied the next year with stories of how they used their meat in new and exciting ways.
